Sweet fresh blueberry and spicy ginger beer combine to create a beautifully balanced, effervescent cocktail perfect for sipping out on the porch.
Ingredients
1 cup fresh blueberries (plus a few more for garnish)
14 cup cocktail
1 TBSP sugar
6 fresh mint leaves (plus extra for garnish)
1 oz fresh lime juice
2 oz gin
Ginger beer
Instructions
Make blueberry syrup by combining blueberries, water and sugar in small pot on medium-high heat. Bring to boil and allow to boil 4-5 minutes stirring occasionally. Reduce heat and allow to simmer for 10 minutes stirring occasionally. Then allow to cool to room temperature.
Muddle mint leaves in a cocktail shaker until until the room smells minty. Then add gin, lime juice and a handful of ice and give it a bartender shake.
Strain into a copper mug then add 1 TBSP blueberry syrup and stir.
Then add ice and top with ginger beer.
Garnish with mint leaves, edible flowers or even a lime! Enjoy!
