Make a ginger simple syrup by stirring granulated sugar into water in small saucepan on medium heat until dissolved. Add ginger and turn off heat. Allow to sit at room temperature for 20 mins so all that ginger goodness diffuses into the syrup. (Note: Extra syrup can be stored in airtight container in refrigerator up to 1 month).
Add 1 oz ginger syrup, orange juice, lime juice and tequila to cocktail shaker filled with ice and shake.
