Can you believe there are only 5 More Days until Christmas?!! My weeks leading up to Christmas have been pretty great! I must have watched Elf and The Santa Clause 20 times, and I’ve had fun experimenting with some yummy Holiday cocktails! Now I’m looking forward to enjoying some time with family and seeing Bennett have fun playing with his cousins! I just wanted to throw one more Holiday cocktail your way before the weekend. This (as always) is super easy to make and one your Holiday guests are sure to enjoy!
Pomegranates are an amazing, great-for-you winter fruit that reminds me so much of the Holidays. As usual I added an herby element by making an herb-infused simple syrup. I also tried this cocktail with and without the Angostura bitters, but I definitely preferred it with the bitters because it added a level of depth and complexity!

Pomegranate Thyme Prosecco Sparkler (makes 1 cocktail)
Ingredients:
Thyme Simple Syrup-
1/2 cup Water
1/2 cup Granulated sugar
1 bunch of Thyme sprigs
Cocktail-
1 oz Thyme Simple Syrup
1 oz Pomegranate Juice
1 Tbsp Fresh Pomegranate Arils
Dash of Angostura Bitters
Prosecco (This one is delicious and at a great price point!)
Thyme Sprigs for garnish
Instructions:
1. To make thyme simple syrup, stir sugar and water in small saucepan on medium heat until sugar dissolves. Turn off heat, add thyme and allow to cool to room temperature. (Simple syrup can be stored in airtight container in refrigerator up to 1 month)
2. To make cocktail, add pomegranate arils to flute. Stir in thyme simple syrup and pomegranate juice, then add dash of bitters. Top with Prosecco and garnish with thyme sprigs.
