New Year’s Eve is quickly approaching! Do you know what you’ll be sipping? If not then look no further! This Rosemary Grapefruit Champagne Fizz is an amazing, easy way to spruce up your Champagne on NYE and would also make an amazing Brunch cocktail for New Year’s Day Brunch!
Grapefruit is one of my favorite fruits, and the combination of grapefruit and rosemary is just heavenly. The piney taste of rosemary makes this the perfect Winter cocktail!
This drink is super easy to make and requires no fancy bartending skills. I used fresh squeezed grapefruit juice because I prefer the color of the cocktail that way, but using grapefruit juice from the bottle is delicious as well!
Rosemary Grapefruit Champagne Fizz (recipe makes 1 cocktail)
Ingredients:
Rosemary Simple Syrup:
1/2 cup water
1/2 cup granulated sugar
2 rosemary sprigs
Cocktail:
1 Tbsp rosemary simple syrup (or more if you want a sweeter cocktail)
1 1/2 oz vodka (I love this local Boston vodka)
3 oz grapefruit juice (fresh squeezed will create the prettiest hue 🙂 )
Champagne (I used this one)
Rosemary sprigs for garnish
Instructions:
1. To make rosemary simple syrup, combine water and sugar in small saucepan on medium heat stirring frequently until sugar dissolves. Turn off heat and add rosemary sprigs. Allow syrup to cool to room temperature then remove rosemary sprigs. (If not using right away, simple syrup can be stored in airtight container in refrigerator up to 1 month).
2. To create cocktail, add rosemary simple syrup, vodka and grapefruit juice to champagne glass and stir. Top with chilled Champagne and garnish with rosemary sprig.
