I have a serious sweet tooth and am always experimenting to try to create effortless desserts that can satisfy my after-dinner dessert craving without all the calories and sugar that come along with it. Formerly I would enjoy a strawberry sundae traditionally with vanilla ice-cream covered with tart, fruity strawberry sauce and some whip cream on top. But my family and I have come up with this alternative option that lacks the excess calories and saturated fat but still satisfies our craving for sweets.
In this “skinny” version of an ice-cream sundae, vanilla ice-cream is replaced with vanilla Greek yogurt. I used a nonfat Greek yogurt with significantly less calories, carbohydrates, and (of course) fat than traditional vanilla ice-cream. Greek yogurt also has significantly more protein, an important component for so many bodily processes.
I made the strawberry sauce with honey in place of granulated sugar. Honey is slightly more healthy than granulated sugar being made up of more complex sugars, and needing more energy for your body to break it down to glucose, you end up collecting fewer calories. And yes, I know, I didn’t have to put those dark chocolate chips on top, but let’s just say they are there for a punch of antioxidants 🙂
As with any sweets you certainly don’t want to overdo it, but if you’re going to wind down with a sundae, this is a more healthy way to go! I hope you all enjoy this tasty treat!
Skinny Strawberry Sundae (recipe makes one sundae)
Ingredients:
Nonfat Vanilla Greek Yogurt
1 lb Fresh Strawberries (plus a few extra for topping)
3 Tbsp Honey
1 Tbsp Fresh Lemon Juice
Dark Chocolate Chips for topping
Instructions:
1. To make strawberry sauce, combine strawberries that have been rinsed and halved with honey in medium saucepan over high heat until honey starts to bubble.
2. Add lemon juice then reduce heat to low and allow to simmer for 40 minutes stirring occasionally.
3. Remove from heat and mash up strawberries with a wooden spoon and allow to cool. (This sauce can be stored in refrigerator for approximately one week and is delicious over waffles and pancakes too!)
4. To construct sundae, add some yogurt to your cup, followed by strawberry sauce and then some more yogurt. Add a few sliced fresh strawberries and sprinkle a few dark chocolate chips on top!
5. Enjoy!
