I have to say, the Solar Eclipse taking place this Monday, August 21st has had me pretty space-geeked-out for months! I’m truly so thrilled to be able to watch such a rare event and I think something this cosmically amazing should be celebrated (and in my mind, that means with sweets)! So, I took to Pinterest for some inspiration and stumbled on the coolest “galaxy cookies”.
Of course my version didn’t turn out quite as magical as the photos I had seen but these cookies were so fun to decorate because I felt the more abstract the icing result, the cooler it looked. It was so fun to swirl around the galactic-inspired colors and not have to make it look beautiful or precise, making this something a non-cookie decorator like myself could tackle.
Admittedly, the sugar cookies and icing were all store-bought but this was truly a quick spur-of-the-moment project. I’d like to say the icing might have been easier to work with if I made it from scratch, but who am I kidding, that’s probably not true. I haven’t decided what I’m doing with these cookies but I’m thinking of sending them to daycare with Bennett or perhaps even taking them to work to commemorate Eclipse Monday!
To make these galaxy cookies I used Pillsbury sugar cookie dough and baked the cookies accordingly (although sugar cookies made from scratch probably would have been much more delicious). After the cookies cooled I microwaved Wilton cookie icing in black, blue, pink and white according to directions until I reached a “flood-like” consistency. Then, starting with the black and followed by blue, then pink, then white, I made rings around the cookie with each color ending with the large white dot in the center. Then I used an etching tool to swirl the colors together into different cosmic designs. On some of the cookies I also added white dots as stars.
I loved making these cookies because it was ok to be imperfect! This would be a great little project to do with the kiddos to get them excited for the eclipse and all things outer space! I hope you all have a wonderful weekend!
