August is National Peach Month and, being from Savannah, GA, of course I had to pay tribute to this observation! I love peaches in the summertime whether in baked goods, or better yet, roasted with a dallop of marscapone cream (A-MAZING). Another way I like to enjoy a tasty peach is in a cocktail. And this Peach Mint Margarita is no exception!
This recipe is pretty simple. The majority of the work involves making a mint simple syrup, which genuinely only takes a few minutes. You also need about half a fresh peach per serving, some fresh lime juice and, of course, a little tequila and triple sec. I also added some sparkling prickly pear orange drink to this batch, but you can have fun with the citrus ingredient and add what you love! It also works great with simple orange juice!
This peach glass of deliciousness is the perfect libation to enjoy these last few weeks of summer! Enjoy them with friends or elevate your own personal happy hour! I hope you all enjoy and have the most wonderful weekend!
Peach Mint Margarita (recipe makes 2 cocktails)
Ingredients:
Mint Simple Syrup-
1/2 cup water
1/2 cup granulated sugar
1/3 cup mint leaves
Margarita-
1 ripe peach, peeled, pit removed, and cut into small pieces
2 oz mint simple syrup
2 oz fresh lime juice
2 oz silver tequila
1 oz triple sec
S..Pellegrino Sparkling Prickly Pear & Orange Beverage (personal preference, use citrus ingredient of choice!)
Salt for glass rim (I used Himalayan Pink Salt)
Fresh mint for garnish
Instructions:
1. To make mint simple syrup, stir sugar and water in small saucepan on medium heat until sugar dissolves. Add mint, turn off heat and allow to cool to room temperature. Strain mint and voila! Mint Simple Syrup (syrup can be stored in airtight container in refrigerator up to one month).
2. Add peach, mint simple syrup, lime juice, tequila and triple sec to blender and pulse until completely smooth. Pour into salt-rimmed glasses with ice then top with sparkling prickly pear & orange beverage (or citrus beverage of choice)! Garnish with fresh mint and enjoy!
